The Park Café: Salt Lake Local Restaurant
Becomes a Food Waste Success Story
The Park Café is a local restaurant that has been an integral part of Salt Lake and a Liberty Park staple since 1984. Owner Sean Miller has created a go-to spot for good food, great vibes, quick service – and has now taken the business one step further toward sustainability.
In early summer, Miller decided to take part in Momentum Recycling’s food waste collection service. The food waste is hauled to a local anaerobic digester and turned into natural gas. As a local business, Miller is supportive of the concept of keeping food waste out of the landfill and was thrilled to hear that the waste could be turned into natural gas to help power Utah homes.
“Momentum sends us an email every month that tells us what we are doing for the environment. The amount of emissions we are saving by turning our food into natural gas is saving the world and we get to find out about that every month – it’s pretty awesome,” said Miller.
As of October 2019, The Park Café has diverted over 17,000 pounds of food waste from the landfill! So rest assured: all of those leftover potatoes are being scraped from your plate into their food waste collection bins.
