From serving wonderful meals on eco-friendly plates, to making sure all waste is being disposed of properly into designated recycling streams, Blended Table is a local catering company that has made sustainability a part of their business plan. We spoke with owner Emery Lortsher and attended one of their events to grasp a better idea of their efforts. “We make it a goal to offset the excessive waste in our industry because we don’t want to just talk about it, we want to do something.”
Blended Table is a waste generator on wheels, yet they have managed to nearly perfect their recycling system in the office as well as at all their events. While offering all three recycling streams (mixed recycling, glass recycling and food waste collection), they can capture just about all of the waste they generate right from the start. Beginning at the office where their team preps for the events, all food scraps are diverted and placed into Momentum Recycling food waste bins that we haul to a local anaerobic digester to be turned into natural gas.
At events, the Blended Table team sets up stations throughout the event center and has a waste station behind the scenes. At the waste station, team members sort through attendees’ plates to properly dispose of each item in the correct recycling stream. Towards the end of the event, the team loads up all the waste and returns it to their office where their Momentum Recycling bins are stored.
Although their system may seem complex, their team has made it a routine. Emery commented on their system saying, “I would just think every business would be psyched to take part in these services, especially restaurants who generate so much food waste. The system is simple, sorting is easy, and anyone can do it!”
As a restaurant owner, employee, or just an everyday individual trying to reduce consumerism, we must do what we can to mitigate our negative impacts on the environment. From choosing to bring your own straw, bike to work, or to simply recycle, every little step towards sustainability makes a difference. Blended Table is catering to not only the community, but to sustainability.
